SICILIAN SFINGI “DONUTS” FOR SAINT JOSEPH’S DAY
These lighter-than-air confections are very special to me, hold a lot of memories of loved one and ARE SO DELICIOUS!!
I don’t concern myself with any ingredients in them that are not on my everyday ‘healthier’ menu. I mean, come ON!!
My Sicilian grandmothers made them. My mom made them. My godmother made them…they are family history as well as yummilicious!
The significance for my family of Saint Joseph’s day is that A LOT of loved ones have had the name Joseph, Josephine, or some variation of the Italian Giuseppe and Giuseppina. My dad’s little brother Joey was born around 1914, before Dad and passed at 18 months old from pneumonia. There was my Aunt Jo, my Aunt Josie, my mom Josephine who was called Josie, JoJo, and Jo depending on who was doing the calling!
The only other name used as much or more in the family was Michael. And we won’t go into that today!
So on to the SFINGI! I am sharing the recipe with you. I’ll be making them next week for Saint Joseph’s Day on March 19th.

SFINGI
INGREDIENTS
1 tsp butter
2 cups water
2 Tblsp sugar
2 ½ cups flour
6 eggs
Oil for frying
DIRECTIONS
Put the water into a pot and put it on the stove on medium heat.
When the water starts to bubble add the butter.
Then add the dry ingredients, stirring until a ball forms, pulling away from the sides of the pot.
Let it cool a while.
Then put about 1/6 of the dough into your mixing bowl and beat it with one egg. Repeat with the rest of the dough, 1/6 and 1 egg at a time.
Let the dough rest for about 20 minutes.
Have hot oil ready. I use an electric skillet set to 375 degrees with a few inches of oil. 2-3 inches should be enough.
Drop the dough into the hot oil by teaspoonfuls. As it fries, the dough will roll around naturally. If not, help roll it with a spoon. Place as many Sfingi into the pan as will easily fit
When they are golden brown in color, remove Sfingi from the oil with a slotted spoon on to a plate with a few thicknesses of paper toweling to absorb any excess oil.
Repeat until all the dough is fried.
Let cool and then drizzle some with a bit of honey, and dust the rest with powdered sugar.
