It turns out of all the soups I make, this is probably my favorite. There’s something about the combination of veggies and broth and herbs that I really love.
And I do find it easy to make. Just gather all the ingredients. Do your dicing or chopping first, and then start adding everything to the InstaPot.
I do use the steel blade on my Cuisinart food processor to dice first the chopped onion, then the chopped carrots, and then the chopped celery. I really like the fine dice I get with the food processor.
The potatoes are unpeeled, washed and chopped by hand to about ¾-1 inch pieces.
Drain the beans and add them.
If the canned tomatoes come chopped, great! And if they’re whole, just crush them with your hand, and be sure to include the juice from the can.
Add the Spinach…and the dried herbs/seasoning. And last, if you’re including it, a smallish piece of rind from Pecorino or Parmesan cheese.
As per my instructions you can make this in the instapot.
Or on the stove top in a good sized pot with a lid.
Bring it to a low boil, and then turn it down to a simmer, partially covered for about an hour.
INGREDIENTS
- 1-2 T Olive Oil (or water/ broth if you prefer)
- 1 med onion, peeled & diced
- 2-3 carrots, diced
- 2-3 celery, diced
- 5 cloves garlic, peeled & minced
- 3 medium Yukon Gold potatoes, unpeeled & chopped
- 1 15 oz can Cannellini beans, drained
- 1 15 oz can Great Northern beans, drained
- 1 qt veggie broth
- 1 15 oz can diced tomatoes, with juice
- 6-8 cups Baby Spinach
- ½ t each dried Thyme, dried Basil, dried Oregano
- Freshly ground Black Pepper
- Optional: A small piece of rind from Parmesan or Pecorino Romano
Set the InstaPot to Saute’, spray it, add the olive oil. Cook Onion, Carrot & Celery for 8-10 minutes. Stir occasionally.
Add Garlic and cook for 2-3 minutes.
Combine all the other ingredients and set the Instapot for 15 minutes.
When done, vent steam, uncover.
At this point, if you wish, you may add in ¾ cup of cooked small pasta like Ditalini, or the same amount of cooked Brown or Jasmine cooked rice. I like the 90 second packages of pre-cooked rice.
Serve and add S & P and grated cheese to your liking.
