Oil-Free OvenFried Rice

Spray a 9″x13″ glass baking dish. No cover needed.

400° Oven

Bake 40-45 minutes

MIX WELL,

THEN PLACE IN THE BAKING DISH

  • 3-4 cups Jasmine or Brown Rice, cooked and cooled
  • 2 1/2 cups Frozen Mixed Vegetables, slightly thawed
  • ¾-1  cup Broth, your choice
  • 2T Low Sodium Soy Sauce or Coconut Aminos (More if you are not salt sensitive)
  • 2t Garlic powder
  • 1 ½ t Onion powder
  • ¼ -⅓ t White pepper

RESERVE ½ -¾ cup thinly sliced Scallions to add when the dish is out of the oven.

OPTIONAL: Also when out of the oven, you may add a protein/vegan option.

For example, Beyond Meat has frozen “Sirloin Tips”.

2-3 minutes in the air fryer, reserve, then add to the dish along with the sliced scallions when the dish comes out of the oven. Mix in well. Be creative.

 

Tip for cooking the rice.

I cook it just like pasta. Bring a pot of water to a boil. Add the rice. Turn down to Medium High.

Cook Jasmine Rice 10 mins.

Cook Brown Rice 35 mins.

When the rice is finished cooking, drain into a colander. Then place the rice back into the pot, off the burner, and let it steam covered for 10 minutes. Done, perfect.

 

Dress with whatever sauce you like on your plate. One of our favorites is Trader Joe’s Sweet Chili Sauce.
