Hey there Spiral Path beauties,
What’s on your menu these days? Maybe you get into a rut like I do and fix the same thing over and over. My husband doesn’t complain, he likes everything I cook, but I do get inspired from time to time. And then, watch out!! LOL
We LOVE Fried Rice. We love eating healthy. And I love shopping at Trader Joe’s. It all comes together in this new recipe I came up with the other night for dinner. Part of our Sacred Self Care is healthy eating and this fits right in there.
In the meantime, I’m loving life in a fabulous flow right now. Synchronicities are popping. Manifesting Miracles one after the other. My latest one was healing a very painful badly pulled abdominal muscle in record time. It was so bad I went to Urgent Care because I thought it was one of my internal organs in trouble. But no, CT scan showed nothing, so yep, a pulled muscle.

SUPER EASY HEALTHY VEGGIE FRIED RICE
1 package Trader Joe’s frozen Vegetable Fried Rice, thawed a bit
1 package Trader Joe’s frozen Cauliflower Rice, thawed a bit
½ cup onion, chopped
2 garlic cloves, minced
½ cup green peas
½ cup edamame
½ cup corn
1 cup broccoli, chopped finely
½ cup carrots, diced or julienned
2 teaspoons fresh ginger
4 scallions, thinly sliced, white only
4-6 T Coconut Aminos, or Low Sodium Tamari (Soy sauce)
2-3 T Honey
2-3 T Toasted sesame oil
Heat a large skillet to medium high heat. Water saute’ the chopped onion until translucent, and add minced garlic for the last minute or so. Add the ginger at this point.
Add contents of both packages, the Fried Rice and the Cauliflower Rice to the skillet.
*If the veggies you’re adding are frozen, thaw them a bit beforehand too.
Add them to the skillet, and gently stir it all constantly until it’s very well heated through.
In a small bowl, mix together the coconut aminos (or soy sauce), honey (or maple syrup for vegans), toasted sesame oil, and sliced scallions.
Pour this sauce over all and toss gently.
This is SO DELICIOUS!!
