Chef AJ’s Banana Oat Muffins, with my tweaks.
I have always said that I never met a recipe I couldn’t tweak and this one is no exception! J
Pre-heat oven to 350*
INGREDIENTS:
4 very ripe bananas
2 cups rolled oats, ground to flour in the VitaMix
½ cup apple juice (I use 2T maple syrup + water to = ½ cup)
½ cup applesauce (I process 2 cored, peeled apples in the FP w/1 T maple syrup)
2T ground flax seed
1 t cinnamon
½ T vanilla
1 t baking soda
1 t baking powder
½ cup chopped walnuts
2 cups frozen blueberries
Place oat flour into a large bowl and add ground flax, cinnamon, baking powder and baking soda. Stir until combined
Process bananas in food processor with S blade til very smooth. Then add in applesauce, water + syrup (or apple juice), and vanilla and process until mixed well.
Pour wet ingredients over dry ingredients and mix until just combined; don’t overmix.
Gently fold in frozen blueberries and chopped walnuts.
Spoon into 18 paper muffin liners that have been quickly sprayed with baking spray, in muffin tins.
Bake for 35-36 minutes, until a toothpick inserted in the middle comes out clean.
Each muffin has aprox 60 calories without nuts, about 75 with nuts.

If you make 12 muffins instead of 18 the calorie count will be closer to 90.
