“ALMOST” Turkey Burgers with Aioli

Hey Dear Ones!!

We all love to eat…and I love to cook, and as I say, I never met a recipe I couldn’t tweak. And these are no different.

 

This was lunch today along with a Baby Spinach Salad that had craisins, pecans, thinly sliced red onion , sliced avocado, and an organic ranch dressing. We have this often, it’s a favorite that lends itself to various other ingredients….as you like. Together with these “ALMOST” Turkey Burgers, topped with the Aioli, and the Sweet Potato Black Bean Mashup, we were in heaven!

“ALMOST” TURKEY BURGERS

1 lb ground turkey

2 cups cooked brown rice or quinoa
(TraderJoe’s has frozen cooked brown rice, or Uncle Ben’s 90 sec is fine)

1 medium onion, chopped finely

4 garlic cloves, minced

1 t olive oil

2 egg whites, or substitute

¼ cup Romano cheese, grated, optional

¼ c fresh basil, minced, or 1 T dried if you don’t have fresh.

Ground black pepper.

 

DIRECTIONS.

350* oven

Put chopped onion and minced garlic in a small bowl with olive oil. Microwave for 2 minutes. Set aside to cool. Be sure brown rice is cool too.

Then mix all ingredients together.

Make 10 patties and place on sprayed baking sheet. Bake for 10 minutes, flip over and bake for 2 more minutes.

Enjoy! They are delish topped with the following AIOLI.

 

LEMON GARLIC AIOLI

3 garlic cloves minced

1 T lemon rind, ground or grated

2 T lemon juice

¼ tsp fine ground white pepper

¾ -1 cup mayonnaise

I make this in a mini-Cuisinart food processor. First the garlic, then lemon rind, both until finely ground. Then add lemon juice, mayo and pepper. Process until very well blended. Keeps well in the fridge…if it lasts that long! ?

 

Amazingly delicious with whole steamed artichokes! OMG.

 

SWEET POTATO BLACK BEAN MASHUP

This is so darn easy. I had roasted some small sweet potatoes yesterday, so I took 3 of them, equaled about 2 cups or so. I opened, rinsed and drained a can of black beans. I chopped about 1/3 cup of fresh cilantro. Got the old potato masher and mashed it all up. Heated it up and SO DELISH! And filling….
