RECIPE: ZUCCHINI ANGEL HAIR WITH MUSHROOMS AND “ITALIAN SAUSAGE”
This impromptu dish had both Dwight and me moaning with delight. So simple and SO good. A creative culinary idea of mine that turned out SO GOOD!

The fennel seeds are key to the flavor profile, giving it that authentic Italian Sausage taste.
The canned tomatoes I use for the Marinara are THE BEST. Try to find them. We LOVE this Marinara!
The Beyond Meat Crumbles are outstanding, a very good meat substitute made with pea protein. Find them in the freezer section of your store.
Dwight had this dish over Alma’s Whole Wheat Angel Hair pasta, the only pasta we eat. Love the texture and the taste.

ZUCCHINI ANGEL HAIR WITH MUSHROOMS AND “ITALIAN SAUSAGE”
2 medium Zucchini, spiralized into angel hair noodles
4 oz Mushrooms, sliced
2 cups Marinara sauce (recipe below) or use your favorite jarred sauce
I cup Beyond Meat Crumbles, Beef
3 Garlic cloves, chopped
½ tsp Fennel seeds
2 T Extra Virgin Olive Oil
Directions:
Put olive oil into a pot on high heat, add sliced Mushrooms and Garlic. Saute’ for a few minutes adding a bit of water to the pan if necessary.
Lower heat and add Beyond Meat Crumbles and Fennel seeds to the mushrooms (this is the “Italian Sausage”). Mix well and cook for a few minutes.
Add 2 cups Marinara sauce to the mushrooms and “Italian Sausage” mix. Now add the Zucchini. Mix well and allow to simmer until the Zucchini noodles are softened. Season to taste with S & P.
Take off heat, cover and allow to rest for a few minutes.
Serve this as is, or over pasta of your choice, topping with additional Marinara sauce.
QUICK EASY MARINARA
1 pint Grape Tomatoes
28 oz can Cento San Marzano tomatoes
2 Garlic cloves
2 tsp Dried basil
¼ tsp Garlic Powder
Pinch of Baking Soda
½ tsp sugar (optional)
Fresh Basil Leaves
Put all ingredients except Fresh Basil Leaves into blender. Blend just until all is chopped and mixed well.
Pour into sprayed pot, bring to a boil. Lower heat and allow to simmer partially covered for 20-30 minutes. Add Fresh Basil leaves. Stir. Let rest a few minutes.

NOTE: To spiralize the Zucchini I use a Paderno Spiralizer I’ve had for years. You will find it on Amazon. There is another small spiralizer called a Vegetti. Or you can buy the zucchini already spiralized into angel hair noodles.
