YUMMILICIOUS HEALTHIEST OATMEAL FRUITY COOKIES
Hello Dear Ones!
I couldn’t wait to share my version of my husband’s favorite cookies. As you know, I never met a recipe I couldn’t tweak. So here you go. Enjoy these healthy treats freely! One gentleman said he’s fine with eating 8 of them, since it like eating a bowl of oatmeal!
By the way, be sure to clean up your thoughts for your mind and heart, as diligently as you clean up for food for your body. Just sayin’…. XOXOXO

YUMMILICIOUS HEALTHIEST OATMEAL FRUITY COOKIES
Preheat Oven to 350 degrees
DRY INGREDIENTS
2 cups rolled oats
2 t cinnamon (optional)
½ t Baking Soda
½ t Baking Powder
2 T ground chia seeds
2 T ground flax seeds
3 T unsweetened coconut
3 T almond flour
3 T coconut flour
Run all of this in VItaMix Blender Dry Cannister until fine. (or your food processor with steel blade)
WET INGREDIENTS
6 T coconut sugar
¼ c coconut oil, melted
1 lg egg + 1 egg white (or egg subs, I have not tried recipe with this subs)
½ + 1/3 cup applesauce (2 individual containers)
1 ½ t vanilla
Mix all together until well combined
ADD INS
½ cup craisins
6-8 medjool dates (or dried apricots)
**Feel free to add nuts, etc to your taste.
Run through food processor pulsing with the steel blade, then add a handful of rolled oats and pulse again, so the pieces separate.
Mix together Dry and Wet Ingredients and then stir in ADD INS.
Drop by generous teaspoonfuls onto sprayed baking sheet.
Bake at 350* for 14 minutes. Let cool on baking sheet.
These are best if they are kept in the freezer. That’s how we like them
This saves us at least $20.00/week which used to be spent on the commercially produced Alyssa’s version, which is very yummy…and rather costly at almost $5 per 8 cookies.
